ELEVATING PIZZA NIGHT

The Dough Bros, founded by brothers Eugene and Ronan Greaney, has been inspired by the traditions of Naples and powered by the finest Irish ingredients, they have transformed Ireland’s pizza culture from the street-food scene to the supermarket.

Eugene had lost his job during the recession and during a chat over a few pints, an idea sparked that transitioned into a mobile pizza truck in Galway City. By 2014, their success led to a pop-up restaurant and in 2016, they established a permanent flagship location. To further develop the brand and product, Ronan travelled to Italy to master the craft! He trained at the Associazione Vera Pizza Napoletana in Naples, regarded as the best pizza school in the world.

It was a rigorous immersion into the strict rules of traditional pizza-making, covering fermentation chemistry, hydration levels and the exact grain properties required for official certification. But for the brothers, this deep immersion in Italian cuisine presented an interesting creative challenge: how to remain authentic while expressing their own personalities.

While honouring traditions they imported the essential '00' flour and San Marzano tomatoes directly from Naples, but decided to collaborate with premium local Irish suppliers for their artisan toppings. Ronan explains, “Why try to be an imitation of something we aren't, when we can celebrate who we are?”.

When the COVID-19 pandemic hit, the brothers pivoted their operations, to create their famous, DIY Pizza Kits. This venture expanded into a dedicated 10,000-square-foot "Pizza Production Playground" facility. In 2021, The Dough Bros were crowned the No. 1 Pizzeria in Ireland at a competition hosted in Naples, retaining the title the following year. In 2023, they reached a historic peak, ranking #15 in the world.

Recognising their incredible potential and shared passion for quality, Simply Better reached out to the Dough Bros to develop their Simply Better Stonebaked Pizza Bases. Launched in 2025, these premium retail bases bring their expertly fermented, hand-stretched dough to homes across Ireland. Celebrating this collaborative success, the product was proudly awarded 2 Stars at the Great Taste Awards later that same year confirming its outstanding quality as a truly world-class retail product. Eugene notes, “It was a steep learning curve to transition from a restaurant to a manufacturing facility while keeping our dough uncompromised, but we're loving it.
