For crisp brown skin, 20 minutes before the end of the total cooking time, carefully remove the chicken from the oven and using a pair of scissors carefully cut open the full length of the bag to expose the chicken. Take care when opening the bag as steam will escape and there will be hot juices. Return to the oven to brown for a further 20 minutes. Ensure the chicken is thoroughly cooked before serving. To check, insert a skewer into the deepest part of the breast and thigh, if the chicken is cooked juices will run clear, if not continue to cook and repeat check.<br/> Once cooked, cover with foil and allow to rest for 10 minutes before carving.
