The grapes first undergo a 6-hour skin contact maceration, extracting as much of the fruity aromas as possible. After a gentle pressing, the must in meticulously cold settled. The fermentation is then led at a cold temperature. After a 24-hour skin contact maceration, at 6°C, only the premium juices are selected. Marilyn chose to assemble the freshness of Sauvignon (60%), the powerful aromas of Colombard (20%) and the complexity of Gros Manseng (20%) to create a wine with a long and silky finish. The juices ferment at a low temperature. The intense fruit aromas come from the specific method used to extract all of the fruity flavors from the big lees. During 20 days they are kept at a 0-2°C temperature, before they are filtered again for fermentation.
