The grapes are destemmed and crushed before they go through a short maceration at a low temperature, exalting all the fruity aromas. The maceration is led following the traditional method, at 26°C, for about one month. Flash release is used for a better extraction of phenolic compounds. Floating skins are regularly pushed down into the juice. This soft extraction technique is called “Pigeage”. As the region&#x27;s name giver, the river Hérault has its spring there at an altitude of about 1400m. After harvest, the grapes are destemmed and crushed. Its history makes it the oldest and largest region in France. <br/> Set between sea and mountains, the Pays d&#x27;Oc enjoys a warm, sunny Mediterranean climate. The region also boasts a diversity of soils, enabling the production of a wide variety of wines with unique characteristics.<br/>Vinification Details - The grapes are harvested separetly. After harvest, part of the crop goes through hot maceration to enhance fruity aromas, colour and soft tannins. The rest of the grapes are destemmed before beginning a two-week traditional maceration.
