Soak in water for 30 minutes to remove excess starch. Drain and pat dry with a clean tea towel. Deep fry at 170°C/340°F for 4-6 minutes and lift out just as they start to colour. Raise the heat to 190°C/375°F and plunge the chips back into the oil for a further 2-3 minutes until golden. Finally drain the chips on absorbent paper and serve.<br/>Oven cook - From Ambient - Roasting.<br/> Wash, peel and cut into even sized pieces. Parboil the potatoes in boiling water for 5 minutes, then drain. Place on a roasting tray with oil. Cook in a pre-heated oven at 190°C/325°F, Gas Mark 5 for 45 minutes to 1 hour, baste as necessary. Stir halfway through cooking. Drain thoroughly and serve.
