Add 1 tablespoon of Goose Fat to a roasting tin and place in a pre-heated oven for approx. 10 mins at 220°C&#x2F;425°F&#x2F;Gas Mark 7. Once the fat is just smoking, carefully add the potatoes. Baste well and place them in the oven for approx. 45 mins.
