Remove all packaging and allow shanks to come up to room temperature for 30 minutes before cooking. Drizzle with a little oil and season with salt and freshly ground black pepper.<br/> 170°C, Fan 150°C, Gas 3, 2-2 1&#x2F;2 hours<br/> Preheat oven. Sear the shanks all over on a dry, hot frying pan to seal in the flavour and juices. Transfer the shanks to a casserole dish, add some root vegetables and enough stock to cover the meat.
