Time to make oooey, gooey black bean brownie bites with a strawberry frosting for your little loves on Valentines Day. Don’t let the black beans put you off, you can’t taste them…but they add so much to this recipe. Fibre, protein and polyphenols which all support your heart. They are sweetened with only banana so they are perfect for little ones. Serve with strawberry cream cheese frosting and a strawberry heart. Then you’ll have the best afternoon treat ever! Ingredients
1 tin black beans (drained)
2 eggs
1/4 cup olive oil
2 bananas
1 tsp baking powder
1/3 cup cocoa powder
1/2 cup plain flour
4 strawberries
4 tbsp Greek yogurt
180g Cream cheese
1 tbsp icing sugar (optional)

BROWNIES

  • 1 tin black beans (drained)
  • 2 eggs
  • 1/4 cup olive oil
  • 2 bananas
  • 1 tsp baking powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup plain flour

FROSTING

  • 4 strawberries
  • 4 tbsp Greek yogurt
  • 180g Cream cheese
  • 1 tbsp icing sugar (optional)
 

METHOD

  1. Pre-heat oven to 170ºC/338ºF.
  2. Add all of the ingredients for the brownies to a food processor of blender and blend until smooth. Divide into a lightly oiled mini-muffin tin. Bake for 25 minutes or until a toothpick comes out clean. Leave to cool fully.
  3. To make the frosting, blend together the strawberries with greek yogurt until it turns pink. Pour into a bowl, then add the cream cheese and mix until fully combined. Stir in the icing sugar (you can leave this out for toddlers and younger babies). Then leave in the fridge to set for about 2 hours.
  4. Dip the brownies into the frosting, top with sliced strawberries, then refrigerate for about an hour before serving.
