Ingredients
25g butter, plus extra to serve
1 onion, diced
450ml hot vegetable stock
450g frozen garden peas
150ml Dunnes Stores fresh cream
Leftover ham, shredded, to serve
Buttermilk soda bread, to serve
Olive oil, to serve
Sea salt
Freshly ground black pepper
Directions

INGREDIENTS

  • 25g butter, plus extra to serve
  • 1 onion, diced
  • 450ml hot vegetable stock
  • 450g frozen garden peas
  • 150ml Dunnes Stores fresh cream
  • Leftover ham, shredded, to serve
  • Buttermilk soda bread, to serve
  • Olive oil, to serve
  • Sea salt
  • Freshly ground black pepper

METHOD

  1. Melt the butter in a medium pan and gently sauté the onion for 6-8 minutes until softened but not coloured.
  2. Increase the heat, add the stock and bring to a rolling boil. Pour the peas in, return to the boil and then reduce the heat to simmer for 6-8 minutes until the peas are tender.
  3. Using a blender, blitz the mix until smooth. Season to taste. Add the cream and blend in.
  4. Ladle the soup into bowls, scatter the ham on top of each and serve with a final seasoning, drizzle of olive oil and sliced, buttered bread.
