Ingredients
1 tbsp olive oil
8 sausages
1 onion, finely sliced
2 tbsp chilli seasoning
2 tins chopped tomatoes
4 medium eggs
Coriander leaves, to serve

  • 1 tbsp olive oil
  • 8 sausages
  • 1 onion, finely sliced
  • 2 tbsp chilli seasoning
  • 2 tins chopped tomatoes
  • 4 medium eggs
  • Coriander leaves, to serve
  • Salt and pepper

METHOD

  1. Heat a frying pan over medium heat. Add in half the oil and cook the sausages until golden and cooked through. Remove from the pan and set aside.
  2. Add the onions to the pan with a pinch of salt until soft and starting to colour.
  3. Add the chilli seasoning and cook for another minute before pouring in the chopped tomatoes. Bring to a steady simmer and cook for 10 minutes.
  4. Use the back of a spoon to make 4 dents in the sauce to hold the eggs. Crack an egg into each dent and arrange the cooked sausages in and around the eggs.
  5. Cover the pan with a lid and cook for 3-4 minutes until the egg whites are set and the egg yolk is still runny.
  6. Season with some black pepper and garnish with coriander leaves.
