Ingredients

100g smoked ham slices, roughly chopped
80g spinach, chopped
120g Dunnes Stores grated mozzarella
100g cherry tomatoes, halved
Dunnes Stores Fresh Herb Chives 20g
10g parsley, chopped
Salt, to taste
Pepper, to taste
Oil or butter for greasing

Ingredients

  • 6 Dunnes Stores Irish Free Range Jumbo Eggs
  • 100g smoked ham slices, roughly chopped
  • 80g spinach, chopped
  • 120g Dunnes Stores grated mozzarella
  • 100g cherry tomatoes, halved
  • 5 spring onions, finely sliced
  • 10g parsley, chopped
  • Salt and pepper to taste
  • Oil or butter for greasing

Method

  1. Preheat oven to 180°C. Grease a 12-hole non-stick muffin tin.
  2. In a bowl, whisk the eggs, seasoning generously. Add the ham, spinach, 100g mozzarella, cherry tomatoes, spring onions, and parsley. Mix to combine.
  3. Divide the mixture evenly between the 12 muffin holes and scatter over the reserved mozzarella. Bake for 20–25 minutes until just set and lightly golden. Cool slightly before removing and serve warm or at room temperature.
  4. Tip: If you don’t have a non-stick muffin tin, simply line with muffin cases!
