Postpartum Burritos Recipe

Ingredients
2 tbsp olive oil
12 eggs
Season with salt and pepper
2 red peppers finely chopped
2 red onions finely chopped
1 cup frozen edamame
2 Packs Dunnes Stores Wholemeal Wraps
2 large handfuls grated cheddar
2 tins black beans drained
1 jar Dunnes Stores Chunky Salsa (mild) or 2 tubs Dunnes Stores Pizza Sauce for no spice
Fresh herbs finely chopped (thyme and parsley)
Directions

INGREDIENTS

  • 2 tbsp olive oil
  • 12 eggs
  • Season with salt and pepper
  • 2 red peppers, finely chopped
  • 2 red onions, finely chopped
  • 1 cup frozen edamame
  • 2 packs Dunnes Stores Wholemeal Wraps
  • 2 large handfuls grated cheddar
  • 2 tins black beans, drained
  • 1 jar Dunnes Stores Chunky Salsa (mild) or 2 tubs Dunnes Stores Pizza Sauce (for no spice)
  • Fresh herbs, finely chopped (thyme and parsley)

 

METHOD

  1. Preheat the oven to 180ºC. Whisk the eggs and olive oil in a large bowl and add the seasoning. Pour onto a baking tray lined with parchment paper, add the peppers and onions, then bake for about 20 minutes until fully set. Slice into 12 portions. (Use 2 portions per wrap.)
  2. To assemble the wraps, add a slice of egg, top with grated cheddar cheese, about ¼ cup black beans, salsa, and a sprinkle of herbs.
  3. Roll up into a burrito, wrap in parchment paper, and freeze.
  4. When ready to use, place a frozen burrito in an air fryer and cook for about 15 minutes or until warmed through. Flip after 7–8 minutes. If not frozen, reheat for about 8–10 minutes.
