½ tin of Dunnes Stores peach slices in syrup
1 tsp vanilla bean paste
1 bottle of Montelliana Prosecco, well chilled

INGREDIENTS
- ½ tin of Dunnes Stores peach slices in syrup
- 1 tsp vanilla bean paste
- 1 bottle of Montelliana Prosecco, well chilled
METHOD
- Drain the peach slices but keep the syrup as you will need it later.
- Place the drained peaches into a high-speed blender and blitz until completely smooth – adding syrup to loosen if they are too thick, until you have a lovely fruit purée. Add the vanilla and blend again, then place 1–2 tablespoons of the purée into the bottom of 4 chilled champagne flutes.
- Slowly top with well-chilled prosecco.
- Gently stir once, or not at all if you want that layered look.
