My Baby's First Blender Breakfast Muffins

Ingredients
120g (1 cup) Wholemeal flour
120g (1 cup) Self-Raising Flour
1tsp baking soda
1tsp cinnamon
1/2 tsp ginger
60ml (1/4 cup) olive oil
375ml (1.5 cups) milk of your choice
2 eggs
1 pouch Dunnes Stores Mango & Peach Smoothie
Handful Frozen Strawberries
1/2 cup mixed seeds (pumpkin and sunflower)
Directions
INGREDIENTS
- 120g (1 cup) Wholemeal flour
- 120g (1 cup) self-raising flour
- 1tsp baking soda
- 1tsp cinnamon
- 1/2 tsp ginger
- 60ml (1/4 cup) olive oil
- 375ml (1.5 cups) milk of your choice
- 2 eggs
- 1 pouch Dunnes Stores Mango & Peach Smoothie
- Handful of Frozen Strawberries
- 1/2 cup mixed seeds (pumpkin and sunflower)
METHOD
- Pre-heat oven to 180ºC/350ºF.
- Add all of the ingredients to a blender and blend until smooth.
- Then pour the mixture into a lightly oiled mini muffin tin, or a regular muffin tin.
- I made a mix of mini and regular.
- For mini muffins, bake for 15 minutes.
- For regular muffins bake for 25 minutes.
- They are done when a skewer comes out clean.
- Leave to cool before serving.
- Store in an airtight container or freeze for a handy, quick breakfast or toddler snack idea.
- Serve with a side of banana spears so your baby gets different textures at mealtimes.
