3 Ways to Use Green Garlic

Ingredients
1 fresh garlic, roughly chopped and 2 fresh garlic stalks
1 lemon, zest and ½ lemon, juiced
150g butter
Sea salt
Freshly ground black pepper
1 tsp Dijon mustard
60–80ml extra-virgin olive oil
Handful of flat-leaf parsley
Sourdough bread

INGREDIENTS

Green Garlic Butter:

  • 1 Fresh Garlic, roughly chopped
  • 1 Lemon, zest
  • 150g Butter
  • Sea Salt & Freshly Ground Black Pepper

Green Garlic Dressing:

  • 2 Fresh Garlic Stalks
  • 1 Tsp Dijon Mustard
  • ½ Lemon, juiced
  • 60–80ml Extra-Virgin Olive Oil
  • Handful of Flat-Leaf Parsley
  • Sea Salt & Freshly Ground Black Pepper

Slow Roasted Garlic on Toasted Sourdough:

  • 1 Fresh Garlic
  • Olive Oil
  • Sourdough Bread
  • Sea Salt & Freshly Ground Black Pepper

METHOD

  1. Green Garlic Butter: Mash the whole bulb and stalk into room-temperature butter with lemon zest and sea salt. Roll into a log and chill. Use on steaks, sweetcorn, or hot toast.
  2. Zippy Green Garlic Dressing: Blitz chopped garlic (stalks and all) with olive oil, lemon juice, Dijon mustard, and soft herbs. Shake over salads, spoon onto grilled veg, or drizzle over fish.
  3. Slow Roast & Squeeze: Wrap a whole bulb in foil with a drizzle of olive oil and roast until soft. Squeeze the cloves like roasted garlic confit onto sourdough or into sauces.
