Ingredients
40g Dunnes Stores Irish porridge oats and 10g for the toasted oats
170g self-raising flour
25g sugar
1 tsp baking powder
30ml milk
1 large egg
30g melted butter and 5g butter for the toasted oats
1 tsp vanilla extract
1/2 tsp cinnamon

Directions

Ingredients

For the pancakes

  • 40g Dunnes Stores Irish porridge oats
  • 170g self-raising flour
  • 25g sugar
  • 1 tsp baking powder
  • 30ml milk
  • 1 large egg
  • 30g melted butter
  • 1 tsp vanilla extract

For the toasted oats

  • 5g butter
  • 10g rolled oats
  • 1/2 tsp cinnamon

To serve

  • Dunnes Stores Greek Style Natural Yogurt
  • Sliced banana
  • Blueberries

Method

  1. To make the pancakes: In a bowl, mix the oats, self-raising flour, sugar, and baking powder. In another bowl whisk the milk, egg, melted butter, and vanilla extract. Add the wet ingredients to the dry and mix gently until just combined. Let the batter rest for 10 minutes.
  2. To make the toasted oats: Melt the butter over a medium–high heat, add the oats, and allow to sizzle and fry, stirring occasionally, until golden, crisp, and fragrant. Stir through the cinnamon. Remove from the heat and allow to cool.
  3. Preheat a heavy-bottomed non-stick pan over a low–medium heat. Add a ladle of batter. It will seem very thick, but this is how it should be. Cook for 3 minutes or until bubbles start to form, flip, and cook for another 1–2 minutes until golden and risen. Repeat until all the batter is used. You can keep the pancakes warm in a low oven.
  4. Serve stacked with dollops of yoghurt, banana slices, berries, honey, and the toasted oats.
