Everything Bagel Smoked Salmon Tart

Ingredients
1 x 320g sheet ready-roll puff pastry
1 egg, lightly beaten 
2 tsp poppy seeds
2 tsp Dunnes Stores White Sesame Seeds
2 tsp crispy onions
¼ tsp garlic granules
½ tsp flaky sea salt
400g cream cheese
1 lemon, zested 
200g Dunnes Stores Oat & Peat Smoked Salmon
½ red onion
250g mini cucumbers
Handful of dill, chopped 
Handful of chives, chopped 
Directions

INGREDIENTS

  • 1 x 320g sheet ready-roll puff pastry
  • 1 egg, lightly beaten
  • 2 tsp poppy seeds
  • 2 tsp Dunnes Stores White Sesame Seeds
  • 2 tsp crispy onions
  • ¼ tsp garlic granules
  • ½ tsp flaky sea salt
  • 400g cream cheese
  • 1 lemon, zested
  • 200g Dunnes Stores Oat & Peat Smoked Salmon
  • ½ red onion
  • 250g mini cucumbers
  • ½ lemon, juiced
  • Handful of dill, chopped
  • Handful of chives, chopped

 

METHOD

  1. Heat the oven 200°C/Fan 180°C/400°F/Gas 6. Unravel the pastry onto a large, flat baking tray lined with parchment.
  2. In a bowl, combine the sesame seeds, poppy seeds, crispy onions, garlic and salt. If you end up with large crispy onions, make sure to crush a little bit for an even texture.
  3. Score a 3 cm border around the edge of the pastry and prick the centre of the pastry all over with a fork, then brush the edge with beaten egg.
  4. Sprinkle the prepared ‘everything but the bagel’ seasoning on the pastry border and bake for 20 minutes. Remove from the oven and leave to cool. Once cooled, push the centre of the pastry down.
  5. Meanwhile, thinly slice the cucumbers and toss in a bowl with the onion, lemon juice, a pinch of sugar and salt.
  6. Mix the cream cheese with the lemon zest. Generously spread this over the cooled tart. Arrange salmon slices over the cream cheese, top with the cucumber and onions, the dill and chives, plus a good grind of black pepper, then cut into six squares.
