Crepes with Orange & Honey

Ingredients
125 g plain flour
2 large eggs
1 tbsp caster sugar
¼ tsp salt
350 ml milk
1 tbsp butter, for frying
Oranges, peeled and sliced
Icing sugar, to serve
Honey, to serve
Mint leaves, to garnish

- 125 g plain flour
- 2 large eggs
- 1 tbsp caster sugar
- ¼ tsp salt
- 350 ml milk
- 1 tbsp butter, for frying
- Oranges, peeled and sliced
- Icing sugar, to serve
- Honey, to serve
- Mint leaves, to garnish
METHOD
- In a mixing bowl, create a well with the flour, then add eggs, sugar and salt, slowly whisking them into the flour. Gradually add the milk, whisking to evenly combine.
- Let the batter stand at room temperature for 15 to 20 minutes before using.
- In a crepe pan over medium heat, melt the butter.
- Ladle some crepe mixture evenly onto the pan, swirling it to evenly coat.
- Cook for 2 minutes, then flip and cook 1 minute more. Repeat with remaining batter.
- Serve the crepes warm with the orange slices, honey, icing sugar and mint leaves.
