5 Ingredient Kid-Friendly Banana & Oat 'Bears’ Pancakes

2 ripe bananas
50g porridge oats
200ml milk
1 egg
250g self raising flour
Neutral oil, for frying
Blueberries
Greek yoghurt
Raspberries

- 2 ripe bananas
- 50g porridge oats
- 200ml milk
- 1 egg
- 250g self raising flour
- Neutral oil, for frying
To serve
- Blueberries
- Greek yoghurt
- Raspberries
Method
- Place 1 banana, the oats, milk, egg and flour into a blender and blitz until smooth.
- Place a large non-stick frying pan over a medium heat and add 1 teaspoon of oil, then, working in batches, drop spoonfuls of the batter into the pan to form a large circle. Now, drop small rounds of batter to the top of each large circle to form ‘ears’ for your bears.
- Cook for 2-3 minutes or until bubbling at the edges and lightly golden, then flip and cook on the other side for a further minute. Repeat until all of the batter is used up.
- To assemble your bears, peel and thinly slice the remaining banana and use it to make a nose for your bear. Use blueberries to create the eyes and place a third blueberry in the centre of the banana to complete the nose.
- Serve with extra fruit on the side and some greek yoghurt for dipping.
