Ingredients
6 eggs
Splash milk

Black pepper to season

Pinch Herbes de Provence

4 Slices Dunnes Stores High Fibre Bread

1 red onion finely diced

1 red pepper finely diced

Drizzle Olive Oil
Small handful Grated Mozzarella & Cheddar
Directions

INGREDIENTS

  • 6 eggs
  • Splash milk
  • Black pepper to season
  • Pinch Herbss de Provence
  • 4 Slices Dunnes Stores High Fibre Bread
  • 1 red onion finely diced
  • 1 red pepper finely diced
  • Drizzle olive oil
  • Small handful Grated Mozzarella & Cheddar

 

Serve with berries to support absorption of non-haem iron.

 

METHOD

  1. Preheat oven to 180ºC/350ºF.
  2. Add the eggs, milk, pepper and herbs to a mixing bowl, then whisk until bubbly.
  3. Cut the bread into small squares, then add to the egg and stir through, then stir in the onion and pepper until fully combined.
  4. Spoon the mixture into mini loaf tins or a mini-muffin tin. Then add a light sprinkle of grated cheese.
  5. Bake for 25 minutes until golden brown.
  6. Serve with chopped strawberries for iron absorption.
