Blackberry Banana Bread

Ingredients
3 bananas

2 eggs

125ml (1/2 cup) whole milk
100g (1/2 cup) olive oil
1 tsp cinnamon

210g (1+1/2 cups) self-raising flour

1t sp baking soda

1 punnet fresh blackberries

  • 3 bananas
  • 2 eggs
  • 125ml (1/2 cup) whole milk
  • 100g (1/2 cup) olive oil
  • 1 tsp cinnamon
  • 210g (1+1/2 cups) self-raising flour
  • 1tsp baking soda
  • 1 punnet fresh blackberries

 

METHOD

  1. Preheat oven to 180ºC/350ºF.
  2. While still in their skins, press the bananas, then add to a bowl and mash. This makes it much easier to break apart.
  3. Whisk in the eggs, milk and oil, then stir in the dry ingredients until fully combined and smooth. Add the blackberries, and mash them lightly. The aim is to have little pieces of blackberry throughout.
  4. Empty the mixture into a loaf tin lined with parchment paper then bake for 60 minutes or until a skewer comes out clean.
  5. Remove from the oven and leave to cool in the tin for roughly one hour. Slice in to portions then freeze with a little parchment paper in between each one.
