Ingredients
250g Dunnes Stores Baking at Home Chopped Dates
250ml Dunnes Stores Unsweetened Oat Drink
150g Dunnes Stores Wholefoods Crunchy Peanut Butter
25g honey
200g Oats
50g Dunnes Stores Wholefoods Chia Seeds
100g Dunnes Stores Baking at Home pecans, roughly chopped
50g goji berries
Directions

You will need:

1 x 20 cm / 9 inch square tin

INGREDIENTS

      • 250g Dunnes Stores Baking at Home Chopped Dates
      • 250ml Dunnes Stores Unsweetened Oat Drink
      • 150g Dunnes Stores Wholefoods Crunchy Peanut Butter
      • 25g honey
      • 200g Oats
      • 50g Dunnes Stores Wholefoods Chia Seeds
      • 100g Dunnes Stores Baking at Home pecans, roughly chopped
      • 50g goji berries

 

METHOD

    1. Line a 20 cm / 9 inch square tin with baking paper.
    2. Place the dates and oat drink into a saucepan and bring to just below a boil. Turn off the heat and leave to stand for 10 minutes then place into a blender and blitz until smooth - alternatively use a hand blender to blitz them together.
    3. Place the date mixture into a large bowl and add the peanut butter and honey. Stir to combine then add the oats, chia, most of the pecans and most of the goji berries.
    4. Mix everything together and then place the mixture into the prepared tin. Flatten with your hands (Tip: using slightly wet hands here will help to prevent the mixture sticking to you) and sprinkle over the remaining pecans and goji berries, pressing them into the top of the mixture.
    5. Place into the fridge to set for at least 4 hours then cut into bars. To store, keep the bars in an airtight container.
