Chorizo & Tomato Pasta with Basil & Grana Padano

180g Fusilli Pasta
100g Chorizo – Chopped Into Large Chunks
250g Cherry Tomatoes – Halved
10g Fresh Basil – Roughly Chopped
1 Garlic Clove – Finely Sliced
2 tbsp Grana Padano – Shaved
Olive Oil
Salt

Directions
INGREDIENTS
- 180g Fusilli Pasta
- 100g Chorizo – Chopped Into Large Chunks
- 250g Cherry Tomatoes – Halved
- 10g Fresh Basil – Roughly Chopped
- 1 Garlic Clove – Finely Sliced
- 2 tbsp Grana Padano – Shaved
- Olive Oil
- Salt
- Pepper
METHOD
- Add the tomatoes, garlic slices and chorizo to a large baking pan.
- Drizzle with 1 tbsp oil, season with salt and pepper and bake in a 200 degree celsius oven for 10 minutes.
- Cook the pasta according to packet instructions and drain.
- Add in the roasted tomato, garlic & chorizo mix and basil, stirring well to ensure the pasta is coated.
- Serve immediately in bowls, topping with Grana Padano shavings, more basil, salt & pepper.
