Ingredients
1 Cauliflower - cut into florets
2 onions - sliced
2 tbsp sunflower oil
1 400ml tin Thai Coconut Milk
1 300g jar of Korma Sauce
1 400g tin Chickpeas In Water - drained and rinsed
8 pieces of Dunnes Stores Freshly Frozen Whole Leaf Spinach
Fresh coriander
Dunnes Stores white wraps, toasted
Lime
Dunnes Stores Tzatziki
200g Dunnes Stores My Family Favourites Basmati Rice , cooked to pack instructions
Salt
Pepper
Directions

INGREDIENTS

  • 1 Cauliflower - cut into florets
  • 2 onions - sliced
  • 2 tbsp sunflower oil
  • 1 400ml tin Thai Coconut Milk
  • 1 300g jar of Korma Sauce
  • 1 400g tin Chickpeas In Water - drained and rinsed
  • 8 pieces of Dunnes Stores Freshly Frozen Whole Leaf Spinach
  • Fresh coriander
  • Dunnes Stores white wraps, toasted
  • Lime
  • Dunnes Stores Tzatziki
  • 200g Dunnes Stores My Family Favourites Basmati Rice, cooked to pack instructions
  • Salt
  • Pepper

 

METHOD

  1. Fry onions in oil for 5 minutes, add the Korma sauce and fry for another 2 minutes.
  2. Add cauliflower, coconut milk and chickpeas – Bring to the boil , then turn down to a simmer on a low heat for 10 minutes until sauce thickens. Then add the frozen spinach and simmer for 5 more minutes.
  3. Serve with Dunnes Stores toasted white wraps, cooked rice, tzatziki and lime.
