Watermelon Pizza with Goat Cheese, Fruit and Balsamic Sauce

Ingredients
Watermelon sliced into circles
120g Dunnes Stores St. Tola Cream Cheese
Zest of 1 lemon and juice of 1/2 lemon
Sprinkle fresh parsley finely chopped
1/2 tsp garlic granules
Black pepper to season
Thinly sliced radishes
Sliced strawberries
Squashed blueberries
Sliced kiwis
1/4 cup balsamic vinegar
Mint leaves to serve
Directions
INGREDIENTS
- Watermelon sliced into circles
- 1/4 cup balsamic vinegar
For the Goat Cheese Sauce:
- 120g Dunnes Stores St. Tola Cream Cheese
- Zest lemon
- Juice 1/2 lemon
- Sprinkle fresh parsley finely chopped
- 1/2 tsp garlic granules
- Black pepper to season
For the toppings:
- Thinly sliced radishes
- Sliced strawberries
- Squashed blueberries
- Sliced kiwis
- Mint leaves to serve
DIRECTIONS
- Add all of the ingredients for the goat cheese sauce to a bowl and mix well. Spoon on top of the watermelon slice and spread evenly.
- Top with sliced fruit or vegetables of your choice. I used radishes, strawberries, blueberries and kiwi.
- To make the balsamic sauce, add the balsamic to a saucepan and bring to the boil, then turn the heat down allowing it to bubble until it starts to thicken. Leave to cool fully before using.
- Pour over the pizza and top then decorate with mint leaves to serve.
