Veggie Loaded Ghost Pizzas

Ingredients
Drizzle olive oil
1 x Carrot, finely chopped
1 x Courgette, finely chopped
1 x Red Pepper, finely chopped
2 cloves garlic, finely chopped
2 tbsp tomato puree
1 x 400g tin chopped tomatoes
1 cup self raising flour
3/4 cup Greek yogurt
Mozzarella slices cut into ghosts

INGREDIENTS

For the Veggie-Loaded Pizza Sauce:

  • Drizzle Olive Oil
  • 1 Carrot, finely chopped
  • 1 Courgette, finely chopped
  • 1 Red Pepper, finely chopped
  • 2 Garlic Cloves, crushed
  • 2 Tbsp Tomato Purée
  • 1 x 400g Tin Chopped Tomatoes

For the 2-Ingredient Dough:

  • 1 Cup Self-Raising Flour
  • ¾ Cup Greek Yogurt

To Top:

  • Mozzarella Cheese Slices, cut into ghost shapes 👻
  • Fresh Basil Leaves, to serve

METHOD

  1. Preheat the oven to 180°C / 350°F and line a baking tray with parchment paper.
  2. Heat a drizzle of olive oil in a pan, then add the finely chopped carrot, courgette, and red pepper. Stir briefly, reduce the heat, cover, and cook for 10 minutes until soft.
  3. Add the garlic and cook for 30 seconds before stirring through the tomato purée and chopped tomatoes. Blend until smooth using a blender or stick blender to make a veggie-packed pizza sauce.
  4. In a bowl, combine the self-raising flour and Greek yogurt until a dough forms. If sticky, add a little more flour. Divide into quarters and roll out into mini pizza bases.
  5. Place the bases on the lined tray, spread 4–6 tablespoons of pizza sauce over each, and top with mozzarella ghosts.
  6. Bake for 15 minutes until golden and bubbling. Serve warm with fresh basil leaves.
