Ingredients
150g chorizo sausage, diced
380g Dunnes Stores Irish beef mince
2 red onions, finely chopped
2 peppers (red/yellow), diced
4 garlic cloves, roughly chopped
2 tbsp tomato purée
1 tsp mixed spice
2 tsp smoked paprika
1 tsp chilli flakes (optional)
2 tbsp chipotle paste
1 tbsp soft dark brown sugar
2 tsp instant coffee granules
400g chopped tomatoes
2 × 400g cans mixed beans, drained
Microwave wild rice mix, to serve
Corn tortilla chips, to serve
Sliced avocado, to serve
Salsa, to serve
Chilli slices or flakes, to serve
Lime wedges, to serve
Directions

INGREDIENTS

  • 150g chorizo sausage, diced
  • 380g Dunnes Stores Irish beef mince
  • 2 red onions, finely chopped
  • 2 peppers (red/yellow), diced
  • 4 garlic cloves, roughly chopped
  • 2 tbsp tomato purée
  • 1 tsp mixed spice
  • 2 tsp smoked paprika
  • 1 tsp chilli flakes (optional)
  • 2 tbsp chipotle paste
  • 1 tbsp soft dark brown sugar
  • 2 tsp instant coffee granules
  • 400g chopped tomatoes
  • 2 × 400g cans mixed beans, drained

To serve

  • Microwave wild rice mix or corn tortilla chips
  • Sliced avocado
  • Quick pickled onions
  • Salsa
  • Chilli slices or flakes
  • Lime wedges

METHOD

  1. Heat a large pan over medium–high heat and fry the chorizo until it releases its oils. Add the mince and brown well.
  2. Add onions and peppers and cook until softened. Add garlic and cook for 1 minute. Stir in the tomato purée, mixed spice, smoked paprika, chilli flakes, and chipotle paste. Cook 1–2 minutes until fragrant.
  3. Stir in the brown sugar, instant coffee, chopped tomatoes, and 400ml water. Season well. Simmer for 45–60 minutes, adding the beans for the last 15 minutes.
  4. Serve with wild rice or corn chips, avocado, pickled onions, salsa, extra chilli flakes, and lime wedges.

Tip: For quick pickled onions, finely slice 1 small red onion and toss with a pinch of sea salt, 1 tsp caster sugar, and 1 tsp white vinegar or lemon juice.
