Ingredients
4 Dunnes Brioche Burger Buns, halved and toasted
12 Dunnes Stores Quick Fry Beef Burgers (3 per burger)
12 cheddar cheese slices
4 tsp yellow mustard, for swiping base buns (optional)
1 head little gem lettuce
1 pack streaky bacon, cut in half
4 tbsp mayonnaise
Dash of pickle juice or vinegar
1 tsp ketchup
1 tbsp Dunnes Relish
Freshly ground black pepper
300g fresh tomatoes, roughly chopped
75g brown sugar
1 tbsp red wine vinegar
1 garlic clove, minced
1 red chilli, deseeded and chopped
Pinch of sea salt
Fresh cut chips
Directions

INGREDIENTS

  • 4 Dunnes Brioche Burger Buns, halved and toasted
  • 12 Dunnes Stores Quick Fry Beef Burgers (3 per burger)
  • 12 Cheddar Cheese Slices
  • 4 Tsp Yellow Mustard, for swiping base buns (optional)
  • 1 Head Little Gem Lettuce
  • 1 Pack Streaky Bacon, cut in half

For the Burger Sauce:

  • 4 Tbsp Mayonnaise
  • Dash of Pickle Juice or Vinegar
  • 1 Tsp Ketchup
  • 1 Tbsp Dunnes Relish
  • Freshly Ground Black Pepper

For the Chilli Jam:

  • 300g Fresh Tomatoes, roughly chopped
  • 75g Brown Sugar
  • 1 Tbsp Red Wine Vinegar
  • 1 Garlic Clove, minced
  • 1 Red Chilli, deseeded and chopped
  • Pinch of Sea Salt

To Serve:

  • Fresh Cut Chips

METHOD

  1. Make the Chilli Jam by adding all jam ingredients to a small saucepan. Simmer over medium heat for 10–12 minutes, stirring often, until thick and sticky. Blend lightly or mash for a chunky finish. Leave aside to cool.
  2. To make the Burger Sauce, mix all the sauce ingredients together in a bowl and set aside.
  3. Cook the bacon in a dry pan until golden and crisp. Set aside.
  4. Heat a large frying pan or griddle pan over medium-high heat. Cook the burgers for 4–5 minutes on each side until browned and cooked through. In the final minute, spoon a little chilli jam on each patty and top with a slice of cheddar so it melts over the glaze.
  5. Toast the brioche buns cut-side down in a dry pan or under the grill.
  6. To assemble, swipe the base with mustard if using, then top with baby gem lettuce. Add the first burger patty, top with crispy bacon and chilli jam. Add the second burger patty and top with a generous spoon of burger sauce. Finally, add the third patty, place the top bun on, and use a skewer to secure if needed.
  7. Serve with chips, a cold drink, and a napkin!
