Sweetcorn and Bean Fritters

Ingredients
1 tin Cannelini Beans drained
80g (1 cup) sweetcorn
2 cloves garlic crushed
2 spring onions, finely chopped
Handful fresh parsley, finely chopped
1/3 cup crushed seeds
1 egg
250ml milk
Olive oil to cook

Directions

INGREDIENTS

  • 1 tin Cannelini beans, drained
  • 80g (1 cup) sweetcorn
  • 2 cloves garlic, crushed
  • 2 spring onions, finely chopped
  • Handful fresh parsley, finely chopped
  • 1/3 cup crushed seeds
  • 1 egg
  • 250ml milk
  • Olive oil to cook

To serve:

  • Slices of avocado
  • A dollop of sour cream
  • Finely chopped parsley

METHOD

  1. Add the beans to a large bowl and mash until completely broken apart.
  2. Add the sweetcorn, garlic, herbs, seeds, egg and milk and stir well.
  3. Then add the flour and fold it into the batter.
  4. Heat a drizzle of olive oil in a pan over a medium heat.
  5. Spoon the mixture into pancake-sized portions.
  6. Fry both sides until golden brown.
  7. Serve with slices of avocado, a dollop of sour cream and finely chopped parsley.
