Sweet Rose & Ginger Paloma

150ml tequila
100ml fresh ruby grapefruit juice and another grapefruit, cut into wedges to serve
4 tbsp lime juice (approx juice of 2 limes)
50ml sugar syrup
150ml dry rosé wine
400ml ginger beer
2 tbsp pink salt, crushed if large
½ tsp cayenne, optional
Four handfuls of ice
Directions
INGREDIENTS
- 150ml tequila
- 100ml fresh ruby grapefruit juice (from about 1 grapefruit)
- 4 tbsp lime juice (approx juice of 2 limes)
- 50ml sugar syrup
- 150ml dry rosé wine
- 400ml ginger beer
To serve:
- 1 ruby grapefruit, cut into wedges
- 2 tbsp pink salt, crushed if large
- ½ tsp cayenne pepper, optional
- Four handfuls of ice
METHOD
- Run a grapefruit wedge along the rim of each of four cocktail tumbler glasses to wet. Dip each one in the pink salt and cayenne (if using), to decorate.
- Put a large handful of ice into each glass. Divide the tequila, grapefruit and lime juices, sugar syrup and rosé wine evenly between them. Top with the ginger beer and pop a grapefruit wedge inside to decorate. Serve at once.
