Ingredients
150ml tequila
100ml fresh ruby grapefruit juice and another grapefruit, cut into wedges to serve
4 tbsp lime juice (approx juice of 2 limes)
50ml sugar syrup
150ml dry rosé wine
400ml ginger beer
2 tbsp pink salt, crushed if large
½ tsp cayenne, optional
Four handfuls of ice
Directions

INGREDIENTS

  • 150ml tequila
  • 100ml fresh ruby grapefruit juice (from about 1 grapefruit)
  • 4 tbsp lime juice (approx juice of 2 limes)
  • 50ml sugar syrup
  • 150ml dry rosé wine
  • 400ml ginger beer

To serve:

  • 1 ruby grapefruit, cut into wedges
  • 2 tbsp pink salt, crushed if large
  • ½ tsp cayenne pepper, optional
  • Four handfuls of ice

METHOD

  1. Run a grapefruit wedge along the rim of each of four cocktail tumbler glasses to wet. Dip each one in the pink salt and cayenne (if using), to decorate.
  2. Put a large handful of ice into each glass. Divide the tequila, grapefruit and lime juices, sugar syrup and rosé wine evenly between them. Top with the ginger beer and pop a grapefruit wedge inside to decorate. Serve at once.
