  • 8 Slices of Simply Better West Cork Co-Op Oakwood Smoked Drinagh Cheddar
  • 1 Pack Simply Better Handmade Seeded Buns

 

For the Whiskey Smoked Bacon Mayonnaise

  • 110g Full Fat Mayonnaise
  • 1 Pack Simply Better 7 Thick Cut Whisked Smoked Dry Cured Irish Streaky Rashers
  • 1 Tbsp Simply Better Organic Grade A Canadian Maple Syrup
  • 2 Tbsp Simply Better Handmade Hot Ketchup
  • 1 Tbsp Simply Better Hot Yellow Mustard
  • 1 Tbsp Simply Better Gherkin Relish

 

To Serve

  • French Fries or Hand Cut Chips

 

METHOD

  1. To make the bacon mayonnaise, cook the whiskey smoked bacon on a pan or under the grill according to pack instructions until crispy. Allow to cool and chop into small pieces. Combine all the remaining ingredients in a bowl and mix well, then stir in the chopped bacon pieces. Set aside until required.
  2. Heat a frying pan over a high heat until smoking hot. Season the smash burgers generously with salt and pepper and place seasoned side down on the pan, immediately place a square of parchment on top and smash with a burger press until thin. Season the other side of the burger and repeat, ensuring both sides have nice crisp edges. Lay a slice of cheddar on top of each beef patty and cover with a lid to allow the cheddar to melt for about 30 seconds.
  3. Without cleaning the pan, toast the burger buns until golden.
  4. To assemble the burgers, lay the base of the buns on a chopping board and smear with a little of the bacon mayonnaise. Top with two smashed burgers and a generous spoonful of bacon mayonnaise before topping with toasted bun.
  5. Serve immediately with French Fries or Hand Cut Chips.
