- 1.4kg Simply Better Irish Angus Rib Roast on the Bone
- 1 Tbsp. Simply Better Handmade Hot Yellow Mustard
- 2 Tbsp. Simply Better Expertly Blended Steakhouse Seasoning
- 2 Packets Simply Better Purple Sprouting Broccoli
- 2 Tbsp. Simply Better Italian Roast Garlic Extra Virgin Olive Oil
- 1 Bag Simply Better Baby Charlotte Potatoes
- 1 Pack Simply Better Parmigiano Reggiano PDO Shavings
- 1 Carton Simply Better Green Peppercorn Pepper Sauce
- Simply Better Achill Island Sea Salt & Freshly Ground Black Pepper
- Thin Slices of Simply Better Abernethy Sea Salted Butter, to serve
Method
- Remove the beef from its packaging and dry with kitchen paper. Smear the flesh of the beef with the mustard and then sprinkle over with the steakhouse seasoning. Leave at room temperature for 1 hour to allow the flavours to develop.
- Preheat the oven to 125°C (250°F/Gas Mark ½). Wrap each bone in tin foil to prevent them from charring. Place the beef on the middle shelf and roast for 2 hours (until the internal temperature hits about 50°C). Take the beef out of the oven and loosely cover with tin foil. Leave to rest in a warm place for 20 minutes.
- Meanwhile, turn the oven up to 240°C (475°F/Gas Mark 8). Toss the broccoli in the roast garlic olive oil and put on a baking sheet, then season generously. Put the beef back in the oven on the middle shelf and pop the broccoli on the top shelf. Cook the beef for 10 minutes so that it gets a nice crust.
- Meanwhile, put the potatoes into a steamer with a pinch of salt and cook for about 20 minutes until tender. Take the beef out of the oven and leave it to stand for 5 minutes, then slice the meat off the bones and carve into portions. Remove the broccoli after 20 minutes when it is lightly charred and scatter over the Parmesan shavings allowing the heat of the broccoli to soften them. Heat the peppercorn sauce in a small pan.
- Arrange the beef on plates with the Parmesan purple broccoli and drizzle over the peppercorn sauce. Add some baby steamed potatoes and put a plate of butter slices on the table so everyone can help themselves.
