Neven Maguire's Giant Sausage Roll

Ingredients
2 Tbsp. Simply Better Italian Extra Virgin Olive Oil
1 Large Onion, finely chopped
1 Pack Simply Better Irish Organic Shitake & White Beech Mushrooms, trimmed & finely chopped
2 Tsp. Simply Better Garlic & Herb Seasoning
1 Pack Simply Better Irish Pork Sausage Meat
1 Pack Simply Better Ready To Roll All Butter Puff Pastry
Plain Flour, for dusting
1 Simply Better Free Range Corn Fed Egg, beaten
Simply Better Achill Island Sea Salt
Freshly Ground Black Pepper
Simply Better Irish Made Beef Gravy

Directions
INGREDIENTS
- 2 Tbsp. Simply Better P.D.O. Italian Extra Virgin Olive Oil
- 1 Large Onion, finely chopped
- 1 Pack Simply Better Irish Organic Shitake & White Beech Mushrooms, trimmed & finely chopped
- 2 Tsp. Simply Better Garlic & Herb Seasoning
- 1 Pack Simply Better Irish Pork Sausage Meat
- 1 Pack Simply Better Ready To Roll All Butter Puff Pastry
- Plain Flour, for dusting
- 1 Simply Better Free Range Corn Fed Egg, beaten
- Simply Better Achill Island Sea Salt & Freshly Ground Black Pepper
To serve:
- Simply Better Irish Made Beef Gravy
- Mashed Potato
METHOD
- Preheat the oven to 200°C (400°F/Gas Mark 6). Heat the oil in a non-stick frying pan. Add the onion and mushrooms, then sauté for 5 minutes. Sprinkle over the garlic and herb seasoning. Tip into a bowl and mix in the sausage meat and season lightly.
- Roll out the pastry onto a board into a large rectangle. Put the sausage meat down the middle, then cut pastry strips, at right angles all the way down. Tuck in the top and bottom and then cross the strips in a lattice over the filling to cover it. Transfer to a baking sheet lined with parchment paper and brush with the beaten egg, then sprinkle with salt. Bake for 35-40 minutes until cooked through and golden brown.
- Carve into slices and arrange on plates with some creamy mashed potato and beef gravy.
