Ingredients
1 tbsp olive oil
8 sausages
1 onion, finely sliced
2 tbsp chilli seasoning
2 tins chopped tomatoes
4 medium eggs
Coriander leaves, to serve

- 1 tbsp olive oil
- 8 sausages
- 1 onion, finely sliced
- 2 tbsp chilli seasoning
- 2 tins chopped tomatoes
- 4 medium eggs
- Coriander leaves, to serve
- Salt and pepper
METHOD
- Heat a frying pan over medium heat. Add in half the oil and cook the sausages until golden and cooked through. Remove from the pan and set aside.
- Add the onions to the pan with a pinch of salt until soft and starting to colour.
- Add the chilli seasoning and cook for another minute before pouring in the chopped tomatoes. Bring to a steady simmer and cook for 10 minutes.
- Use the back of a spoon to make 4 dents in the sauce to hold the eggs. Crack an egg into each dent and arrange the cooked sausages in and around the eggs.
- Cover the pan with a lid and cook for 3-4 minutes until the egg whites are set and the egg yolk is still runny.
- Season with some black pepper and garnish with coriander leaves.
