Raspberry, Lemon and White Chocolate Bars

Ingredients
2 bananas
Juice and zest 1 x Lemon and juice of another for the jam
1/4 cup coconut oil
1/3 cup olive oil
1 tbsp chia seed for the bars and 1 tbsp for the jam
1.5 cups wholemeal flour
1.5 cups oats
1 tsp cinnamon
1/2 tsp baking soda
1/3 cup ground almonds
250g (2 x punnets) raspberries (use 1.5 for jam and reserve rest to top the bars)
White chocolate chips (optional)
Directions

INGREDIENTS

  • 2 bananas
  • Juice and zest 1 x Lemon
  • 1/4 cup coconut oil
  • 1/3 cup olive oil
  • 1 tbsp chia seed
  • 1.5 cups wholemeal flour
  • 1.5 cups oats
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/3 cup ground almonds
  • White chocolate chips (optional)

Raspberry Chia Jam

  • 250g (2 x punnets) raspberries (use 1.5 for jam and reserve rest to top the bars)
  • Juice 1 lemon
  • 1 tbsp ground chia

METHOD

  1. Preheat oven to 180ºC.
  2. Add the wet ingredients to a bowl and mash until the bananas are broken apart, then stir in the dry ingredients until fully combined.
  3. Take 3/4 of the mixture and empty into a baking tray lined with parchment paper, then press down using a spatula.
  4. To make the raspberry chia jam, add roughly 190g of raspberries to a pan along with the juice of a lemon. Press down until they break apart and start to bubble, then stir in the chia. Pour over the base mixture.
  5. Top with small chunks of the remaining dough, then break apart the remaining raspberries and spread evenly on top. Finally add a sprinkle of white chocolate chips (if you are using them).
  6. Bake for 25-30 minutes until golden brown on top, then leave to cool fully before slicing into bars.
