Raspberry, Lemon and White Chocolate Bars

Ingredients
2 bananas
Juice and zest 1 x Lemon and juice of another for the jam
1/4 cup coconut oil
1/3 cup olive oil
1 tbsp chia seed for the bars and 1 tbsp for the jam
1.5 cups wholemeal flour
1.5 cups oats
1 tsp cinnamon
1/2 tsp baking soda
1/3 cup ground almonds
250g (2 x punnets) raspberries (use 1.5 for jam and reserve rest to top the bars)
White chocolate chips (optional)

- 1/4 cup coconut oil
- 1/3 cup olive oil
- 1 tbsp chia seed
- 1.5 cups wholemeal flour
- 1.5 cups oats
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/3 cup ground almonds
- White chocolate chips (optional)
Raspberry Chia Jam
- 250g (2 x punnets) raspberries (use 1.5 for jam and reserve rest to top the bars)
- Juice 1 lemon
- 1 tbsp ground chia
METHOD
- Preheat oven to 180ºC.
- Add the wet ingredients to a bowl and mash until the bananas are broken apart, then stir in the dry ingredients until fully combined.
- Take 3/4 of the mixture and empty into a baking tray lined with parchment paper, then press down using a spatula.
- To make the raspberry chia jam, add roughly 190g of raspberries to a pan along with the juice of a lemon. Press down until they break apart and start to bubble, then stir in the chia. Pour over the base mixture.
- Top with small chunks of the remaining dough, then break apart the remaining raspberries and spread evenly on top. Finally add a sprinkle of white chocolate chips (if you are using them).
- Bake for 25-30 minutes until golden brown on top, then leave to cool fully before slicing into bars.
