Blistered Padron Peppers & Garlic Aioli

3 tbsp Dunnes Stores Real Mayonnaise
1 garlic clove, finely grated
1 lemon, zested
200g Padron peppers
1 tbsp olive oil
Flaky sea salt
Freshly ground black pepper

- 3 tbsp Dunnes Stores Real Mayonnaise
- 1 garlic clove, finely grated
- 1 lemon, zested
- 200g Padron peppers
- 1 tbsp olive oil
- Flaky sea salt & freshly ground black pepper
METHOD
- To make the garlic aioli, in a small bowl combine three tablespoons of mayonnaise with finely grated garlic, lemon zest and a little freshly ground black pepper. Set aside until needed.
- Heat the oil in a large frying pan until almost smoking. Add the peppers and cook for 3–4 minutes, shaking the pan often, until blistered all over and starting to collapse.
- Drain on a paper towel and scatter with flaky salt.
- Serve immediately with garlic aioli on the side- cold drinks essential!
