Ingredients
Small Irish Whole Chicken 1.2kg
Sweet Potato
1kg Freshly Frozen Broccoli Florets
Lemon
Thyme

INGREDIENTS

  • Small Irish Whole Chicken 1.2kg
  • Sweet Potato
  • 1kg Freshly Frozen Broccoli Florets

To Season:

  • Lemon
  • Thyme

METHOD

  1. Preheat the oven to 180°C
  2. Season the chicken with salt and pepper and place in a roasting tray along with the thyme and sweet potato. Roast for 1 hour until the chicken is cooked through and the sweet potatoes are golden and sticky.
  3. Remove the tray from the oven and remove the chicken. Cover loosely with foil and allow to rest.
  4. Place the casserole onto a medium heat on the stove. Once the juices are bubbling, add the broccoli. Season and cover with a lid and allow to cook for 6 minutes.
  5. Carve the chicken and add back to the casserole pan on top of all the vegetables. Serve straight to the table with a good squeeze of lemon juice and a sprinkling of parsley.
