Ingredients
Drizzle of Extra Virgin Olive Oil
2 Cloves Garlic
1 tsp Italian Seasoning
110g (1 tub) Semi-Dried Tomatoes
1 Very-Low Salt Stock Cube
2 tbsp Flour
250g Tortelloni (I used Mozzarella, Tomato and Basil)
1/2 cup (125ml) fresh cream
2 handfuls of spinach leaves (finely chopped)
2 tbsp tomato puree
1/3 cup grated Parmesan (1 handful roughly) (not for babies)
Fresh basil
Sourdough bread
Directions

INGREDIENTS

  • Drizzle of Extra Virgin Olive Oil
  • 2 Cloves Garlic
  • 1 Tsp Italian Seasoning
  • 110g (1 Tub) Semi-Dried Tomatoes
  • 1 Very-Low Salt Stock Cube
  • 2 Cups (500ml) Water
  • 2 Tbsp Flour
  • 250g Tortelloni (e.g. Mozzarella, Tomato & Basil)
  • 1/2 Cup (125ml) Fresh Cream
  • 2 Handfuls Spinach Leaves, finely chopped
  • 2 Tbsp Tomato Puree
  • 1/3 Cup Grated Parmesan (not for babies)

To Serve:

  • Fresh Basil
  • Sourdough Bread

METHOD

  1. Heat the olive oil in a large pan over medium heat. Add the garlic and Italian seasoning and cook for about 30 seconds.
  2. Chop the semi-dried tomatoes, add to the pan, and stir well. Crumble in the stock cube, then pour in the water and immediately add the flour. Stir until the stock cube and flour have completely dissolved into the liquid.
  3. Add the tortelloni and bring to a gentle bubble, stirring often to prevent lumps. Cook for 3–5 minutes until the pasta is soft.
  4. Pour in the fresh cream, add the spinach leaves and tomato puree, and stir well.
  5. Remove the baby portion before adding the grated Parmesan.
  6. Stir in the Parmesan, then serve topped with fresh basil leaves and slices of sourdough bread.
