Ingredients
1 grated carrot
1 cup broccoli
½ cup frozen peas
Handful fresh parsley
1 tin cannellini beans
½ cup grated cheddar cheese
2 cups flour
2 tsp baking powder
½ tsp baking soda
⅓ cup milk
⅓ cup Greek yogurt
¼ cup olive oil

INGREDIENTS

  • 1 grated carrot
  • 1 cup broccoli
  • ½ cup frozen peas
  • Handful fresh parsley
  • 1 tin cannellini beans
  • ½ cup grated cheddar cheese
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ⅓ cup milk
  • ⅓ cup Greek yogurt
  • ¼ cup olive oil

 

METHOD

  1. Preheat the oven to 170ºC/325ºF.
  2. Add the vegetables, herbs, beans and cheese to a food processor and pulse until broken apart, but not mushy.
  3. Keep the processor on, then add the flour, baking powder and soda.
  4. In a jug, mix together the wet ingredients, then pour into the vegetable and bean mixture.
  5. Spoon the batter into a lightly oiled mini muffin tin and bake for 20 minutes or until a toothpick inserted comes out clean.
