Gut Friendly Pancakes

Ingredients
90g (1 cup) oats
120g (1 cup) self raising flour
1 tsp baking powder
1 cup buttermilk
3/4 cup greek yogurt
2 eggs
2 tbsp melted butter
Banana
Peanut butter
Blueberries
Raspberry
Lemon zest
Chia seeds
Dark chocolate
Directions
INGREDIENTS
- 90g (1 cup) oats
- 120g (1 cup) self raising flour
- 1 tsp baking powder
- 1 cup buttermilk
- 3/4 cup greek yogurt
- 2 eggs
- 2 tbsp melted butter
Filling Ideas:
- Banana & Peanut Butter
- Blueberries and Crushed Seeds (finely crushed for babies)
- Raspberry and Lemon Zest + lemon Juice + Chia seeds
- Dark Chocolate & Finely Crushed Nuts and Seeds
- Serve with extra Greek yogurt for gut health
METHOD
- Preheat oven to 180ºC/350ºF.
- Add the pancake ingredients to a blender and blend until smooth. Pour into oven containers then add your toppings. Make each one different so you are eating different plants every morning.
- Bake for 25 minutes until set. A skewer should come out clean. Cool then leave in the fridge covered until ready to eat. They last 5 days.
- Serve with yogurt, fruit and extra crushed seeds, nuts and peanut butter.
