Ingredients
4 medium sized potatoes
2 spring onions finely chopped
Handful chives finely chopped
Handful grated cheese
Black pepper to season
1/2 cup flour
1 egg
Mozzarella Bocconcini
Mild Curry Powder
Turmeric
Directions

INGREDIENTS

  • 4 medium sized potatoes
  • 2 spring onions finely chopped
  • Handful chives finely chopped
  • Handful grated cheese
  • Black pepper to season
  • 1/2 cup flour
  • 1 egg

To serve:

  • Mini Mozzarella Cherries
  • Curry or Turmeric powder (optional)

METHOD

  1. Pre-heat oven to 180ºC/350ºF.
  2. Grate the potato then add to a bowl along with the spring onions, chives and grated cheese then stir well. Season with a little black pepper then add the flour and mix well.
  3. Whisk the egg in a bowl, pour into the potato mixture before stirring until fully combined. Divide the mixture into a muffin tin lightly oiled (I used olive oil). Press the middle down to form the shape of a little nest. Then bake for 20-25 minutes until the sides are golden.
  4. Serve with small pieces of mozzarella cherries shaped into little eggs. I dotted them with a little curry powder to make them look like eggs. Then sprinkled over extra chives to serve.
