Crepes with Orange & Honey

Ingredients
125 g plain flour
2 large eggs
1 tbsp caster sugar
¼ tsp salt
350 ml milk
1 tbsp butter, for frying
Oranges, peeled and sliced
Icing sugar, to serve
Honey, to serve
Mint leaves, to garnish
Directions

INGREDIENTS

  • 125 g plain flour
  • 2 large eggs
  • 1 tbsp caster sugar
  • ¼ tsp salt
  • 350 ml milk
  • 1 tbsp butter, for frying
  • Oranges, peeled and sliced
  • Icing sugar, to serve
  • Honey, to serve
  • Mint leaves, to garnish

 

METHOD

  1. In a mixing bowl, create a well with the flour, then add eggs, sugar and salt, slowly whisking them into the flour. Gradually add the milk, whisking to evenly combine.
  2. Let the batter stand at room temperature for 15 to 20 minutes before using.
  3. In a crepe pan over medium heat, melt the butter.
  4. Ladle some crepe mixture evenly onto the pan, swirling it to evenly coat.
  5. Cook for 2 minutes, then flip and cook 1 minute more. Repeat with remaining batter.
  6. Serve the crepes warm with the orange slices, honey, icing sugar and mint leaves.
