Cottage Cheese Pizza

Ingredients
300g tub Cottage Cheese (24g protein)
3 eggs (10g)
1 clove garlic
1 tsp Italian seasoning
Dunnes Stores Pizza Sauce
Handful Fresh Spinach
Finely chopped olives
Sliced Cherry Tomatoes Warmed
Directions
INGREDIENTS
- 300g tub Cottage Cheese (24g protein)
- 3 eggs (10g)
- 1 clove garlic
- 1 tsp Italian seasoning
Toppings:
- Dunnes Stores Pizza Sauce
- Handful Fresh Spinach
- Finely chopped olives
- Sliced Cherry Tomatoes Warmed
METHOD
- Pre-heat oven to 180ºC/350ºF.
- Add all of the pizza base ingredients to a blender and blend until smooth and creamy. Pour onto a baking sheet lined with parchment paper and spread until even. It is really liquid’y but spread evenly on the sheet.
- Bake for 25-30 minutes until it sets and turns golden.
- Spread over the sauce, add the cheese and toppings, and bake for a further 10 minutes until the cheese melts and toppings are soft and cooked.
- For babies, cut into fingers and serve with a side of steamed broccoli for extra iron.
