Chicken Salad

Ingredients
900g chicken thighs
1 tbsp chicken seasoning
1 courgette, julienned
1 iceberg lettuce, torn into bite-size pieces
250g cherry tomatoes, halved
1 red onion, thinly sliced
Sweet and tangy maple mustard dressing
1 lime, cut into wedges

- 900g chicken thighs
- 1 tbsp chicken seasoning
- 1 courgette, julienned
- 1 iceberg lettuce, torn into bite-size pieces
- 250g cherry tomatoes, halved
- 1 red onion, thinly sliced
- Sweet and tangy maple mustard dressing
- 1 lime, cut into wedges
METHOD
- Preheat the oven to 200C. Place the chicken thighs into a roasting pan and season all over with the chicken seasoning and drizzle with oil. Place the oven to roast for 35-40 minutes until golden and cooked through. Remove from the oven and shred.
- Meanwhile, place lettuce and courgette into a very large bowl and toss to combine.
- Once ready to serve, dress the lettuce and courgette well with the dressing and top with the tomatoes, onion and shredded chicken.
- Serve with extra maple mustard dressing and lime wedges.
