Ingredients
900g chicken thighs
1 tbsp chicken seasoning
1 courgette, julienned
1 iceberg lettuce, torn into bite-size pieces
250g cherry tomatoes, halved
1 red onion, thinly sliced
Sweet and tangy maple mustard dressing
1 lime, cut into wedges
Directions

INGREDIENTS

  • 900g chicken thighs
  • 1 tbsp chicken seasoning
  • 1 courgette, julienned
  • 1 iceberg lettuce, torn into bite-size pieces
  • 250g cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • Sweet and tangy maple mustard dressing
  • 1 lime, cut into wedges

METHOD

  1. Preheat the oven to 200C. Place the chicken thighs into a roasting pan and season all over with the chicken seasoning and drizzle with oil. Place the oven to roast for 35-40 minutes until golden and cooked through. Remove from the oven and shred.
  2. Meanwhile, place lettuce and courgette into a very large bowl and toss to combine.
  3. Once ready to serve, dress the lettuce and courgette well with the dressing and top with the tomatoes, onion and shredded chicken.
  4. Serve with extra maple mustard dressing and lime wedges.
