Ingredients
2 bulbs of garlic (peeled)

Olive oil
Sprig of rosemary
Handful finely chopped parsley
DUNNES STORES High Fibre Bread
Grated Mozzarella
Directions

INGREDIENTS

  • 2 bulbs of garlic (peeled)
  • Olive oil
  • Sprig of rosemary
  • Handful finely chopped parsley
  • Dunnes Stores High Fibre Bread
  • Grated Mozzarella

 

METHOD

  1. Pre-heat oven to 120ºC/250ºF.
  2. Add the garlic bulbs to a small oven proof dish.
  3. Cover with olive oil, then add the sprig of rosemary and bake in the oven for about 2 hours until they are lovely and browned.
  4. Leave to cool, then mash with the chopped parsley.
  5. Cover with a lid and leave in the fridge until ready to use.
  6. To make the garlic bread, slice the bread and toast one side, then spread over a teaspoon of the garlic confit on the un-toasted side.
  7. For adults and older children, top with grated mozzarella.
  8. For smaller babies and toddlers, swap to a very light sprinkle of mild cheddar which is safer and doesn't have a chewy texture.
  9. Place the tray under the grill until the cheese is melted and starting to bubble.
  10. Slice into fingers and serve warm.
