Blackberry & Apple Triangles

Ingredients
1 Pack Simply Better Ready To Roll All Butter Puff Pastry, thawed and fridge cold
2 Simply Better Limited Edition Apples
1 Jar Simply Better Handmade Blackberry Preserve
100g Simply Better Abernethy Sea Salted Butter, softened
2 Tsp Simply Better Saigon Cinnamon
60g Light Brown Sugar
1 Simply Better Irish Free Range Corn Fed Egg Yolk, beaten
50g Icing Sugar
1 Lemon
2 Tbsp Simply Better Original Cream Cheese
Directions
INGREDIENTS
- 1 Pack Simply Better Ready To Roll All Butter Puff Pastry, thawed and fridge cold
- 2 Simply Better Limited Edition Apples
- 1 Jar Simply Better Handmade Blackberry Preserve
- 100g Simply Better Abernethy Sea Salted Butter, softened
- 2 Tsp Simply Better Saigon Cinnamon
- 60g Light Brown Sugar
- 1 Simply Better Irish Free Range Corn Fed Egg Yolk, beaten
Lemon drizzle topping
- 50g Icing Sugar
- 1 Lemon
- 2 Tbsp Simply Better Original Cream Cheese
METHOD
- Preheat the oven to 180°C Fan.
- Add the softened butter, sugar and cinnamon to a bowl and mix into a paste and set aside.
- Roll out the pastry on a lightly floured work surface to a 25cm x 40cm rectangle. Spread the butter and cinnamon mixture over the pastry, leaving a 1cm border around the edges. Then spread the blackberry jam over the butter and cinnamon.
- Grate the apple, place into a clean tea towel and squeeze out the excess moisture. Place the apple on top of the jam in an even layer. Then roll it up along the long edge into a tight log.
- With the seam side down, gently flatten the dough out until the pastry is 7cm in width. Trim the sides, brush with the egg yolk and cut into 12 even sized triangles.
- Place onto a lined baking tray and bake for 20-25 minutes until golden brown. Allow to cool.
- For the lemon drizzle topping, mix all the ingredients together to make a glaze. If it's too thick add a little extra lemon or water to loosen. Drizzle over the top of the blackberry and apple triangles and serve.
