Ingredients
45ml Baileys Chocolate
22ml Smirnoff No. 21 Vodka
30ml Nescafe Espresso Instant Coffee
Sugar for the Simple Syrup and the Vanilla Foam
(For the Dipped Strawberries) Punnet of strawberries
(For the Dipped Strawberries) 100g Gem White Chocolate chips
(For the Dipped Strawberries) Dr. Oetker Red Food Colour Gel
(For the Vanilla Foam) 60 ml cream
(For the Vanilla Foam) 60 ml milk
(For the Vanilla Foam) ½ tsp vanilla extract
Directions

Ingredients:

  • 45ml Baileys Chocolate
  • 30ml Nescafe Espresso Instant Coffee
  • 22ml Smirnoff No. 21 Vodka



Dipped Strawberries Ingredients

  • Punnet of strawberries
  • 100g Gem White Chocolate chips
  • Dr. Oetker Red Food Colour Gel



Simple Syrup Ingredients:

  • 1 cup water
  • 1 cup white sugar



Vanilla Foam Ingredients

  • 60 ml cream
  • 60 ml milk
  • ½ tsp vanilla extract
  • 1–2 tsp sugar





Method:

  1. Let the strawberries come to room temperature
  2. Melt the white chocolate chips in the microwave in a bowl
  3. Add gel colouring a tiny bit at a time
  4. Use a toothpick to refine the swirl pattern
  5. Skew strawberry and dip in twisting motion
  6. Cool and set aside (approx 15 - 30 mins in fridge)



Add to a shaker:

  1. 45ml Baileys Chocolate
  2. 30ml Nescafe Espresso Instant Coffee
  3. 2.5ml Simple Syrup
  4. 22ml Smirnoff No.21 Vodka
  5. Shake for 15 seconds
  6. Strain into a chilled martini cocktail glass



For the foam

Add 60ml cream, 60ml milk, ½ tsp vanilla extract and 1 teaspoon of sugar to a jar and shake hard to create a soft pourable foam.

Garnish with vanilla cold foam.
