One Pot Garlic & Lemon Butter Beans

Ingredients
Drizzle olive oil
2 cloves garlic crushed
2 tbsp tomato puree
1 heaped tsp smoked paprika
1 heaped tsp ground cumin
2 tins chopped tomatoes
Juice 1 lemon
Pepper to season
2 tins butter beans drained
2 large handfuls spinach leaves (chopped for smaller babies)
Handful mixed herbs finely chopped
1/4 cup creme fraiche
Avocado spears
Extra herbs
Extra creme fraiche
High fibre bread lightly toasted

- 1 heaped tsp smoked paprika
- 1 heaped tsp ground cumin
- 2 tins chopped tomatoes
- Juice of 1 lemon
- Pepper to season
- 2 tins butter beans drained
- 2 large handfuls spinach leaves (chopped for smaller babies)
- Handful mixed herbs finely chopped
- 1/4 cup creme fraiche
To Serve
- Avocado spears
- Extra herbs
- Extra creme fraiche
- High fibre bread lightly toasted
METHOD
- Warm olive oil in a large pot, add the garlic and fry for about a minute.
- Stir in the tomato puree, spices and chopped tomatoes and lemon juice. Season with pepper, then add the butter beans, spinach leaves and chopped herbs. Stir for just a minute until the spinach wilts, then remove from the heat and stir in the creme fraiche.
- Serve with avocado spears, an extra sprinkle of herbs and a dollop of creme fraiche and toasted high fibre bread.
- For babies, smush the beans to make safe, then serve on a preloaded spoon or mashed on toasted soldiers.
