Ingredients
6 hot dog style sausages
6 hot dog rolls
2 tbsp honey
2–3 garlic cloves, finely grated or minced
1 tbsp ketchup
1 tbsp soy sauce
(optional kick) 1 tsp Dijon mustard
(optional kick) 1 tsp sriracha
1 tbsp white wine vinegar (or rice vinegar)
1 tbsp oil
salt
pepper
Garlic butter (for toasting buns)
(to serve) Crispy fried onions
(to serve) Chopped chives
(to serve) Parsley
(to serve) Sea salt crisps
(to serve) Coleslaw
Directions

INGREDIENTS

  • 6 Dunnes Irish Hot Dog style sausages
  • 6 Dunnes Stores hot dog rolls
  • 2 tbsp honey
  • 2–3 garlic cloves, finely grated or minced
  • 1 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard or sriracha (optional kick)
  • 1 tbsp white wine vinegar (or rice vinegar)
  • 1 tbsp water
  • 1 tbsp oil
  • Salt & black pepper
  • Garlic butter (for toasting buns)

To serve (optional but excellent):

  • Crispy fried onions
  • Chopped chives or parsley
  • Sea salt crisps or a zingy coleslaw

METHOD

  1. In a small bowl, mix together the honey, garlic, ketchup, soy sauce, vinegar, water, and mustard or sriracha if using.
  2. Heat the oil in a large non-stick pan over medium heat. Add the sausages and cook for 8–10 minutes, turning regularly, until browned and almost cooked through.
  3. Reduce the heat to low. Pour the glaze into the pan with the sausages. Simmer gently, turning the sausages often, for 5–7 minutes or until the glaze thickens and coats the sausages in a glossy, sticky finish.
  4. While the glaze reduces, split the buns and toast them in a dry pan or under the grill until golden. For extra flavour, brush with garlic butter before toasting.
  5. Place one glazed sausage into each toasted bun. Spoon over extra glaze from the pan. Top with crispy fried onions, chives, or your favourite crunchy finishing touch.
  6. Serve with sea salt crisps and a zingy slaw or pickled onions for contrast. This also works brilliantly sliced into smaller bites for a party tray.
