Cauliflower & Chickpea Korma

Ingredients
1 Cauliflower - cut into florets
2 onions - sliced
2 tbsp sunflower oil
1 400ml tin Thai Coconut Milk
1 300g jar of Korma Sauce
1 400g tin Chickpeas In Water - drained and rinsed
8 pieces of Dunnes Stores Freshly Frozen Whole Leaf Spinach
Fresh coriander
Dunnes Stores white wraps, toasted
Lime
Dunnes Stores Tzatziki
200g Dunnes Stores My Family Favourites Basmati Rice , cooked to pack instructions

Directions
INGREDIENTS
- 1 Cauliflower - cut into florets
- 2 onions - sliced
- 2 tbsp sunflower oil
- 1 400ml tin Thai Coconut Milk
- 1 300g jar of Korma Sauce
- 1 400g tin Chickpeas In Water - drained and rinsed
- 8 pieces of Dunnes Stores Freshly Frozen Whole Leaf Spinach
- Fresh coriander
- Dunnes Stores white wraps, toasted
- Lime
- Dunnes Stores Tzatziki
- 200g Dunnes Stores My Family Favourites Basmati Rice, cooked to pack instructions
- Salt
- Pepper
METHOD
- Fry onions in oil for 5 minutes, add the Korma sauce and fry for another 2 minutes.
- Add cauliflower, coconut milk and chickpeas – Bring to the boil , then turn down to a simmer on a low heat for 10 minutes until sauce thickens. Then add the frozen spinach and simmer for 5 more minutes.
- Serve with Dunnes Stores toasted white wraps, cooked rice, tzatziki and lime.

METHOD
